Tips & tricks

This Greek soup dish is one of the best tasting dishes in Greece and it is a very popular. You will see in the video that very simple ingredients are used in this soup, but best tasting soup comes from choosing the right fish. The soup can be finished with egg/lemon sauce (αυγολέμονο).

Recipe directions


  • Rinse the fish thoroughly (already has been cleaned).
  • Season the fish with salt, inside and out.
  • Add water in a pot.
  • Add the vegetables specified in the recipe and some hot pepper flakes (optional), to taste.
  • Add the oil.
  • Boil for about 1 hour and 30 minutes or until potatoes and vegetables are 90% done.
  • When vegetables are almost done, add the rice and cook for about 15 minutes.
  • Stir constantly for the first minute or two, to prevent the rice from sticking together.
  • When the rice is almost done add the fish and cook for another 15 minutes.
  • The last 5 minutes of cooking taste the soup and season with salt if needed.
  • The fish is ready after 15 minutes. You know it's done when the fish's body starts to breaks apart.
  • When fish is ready place it on a platter.
  • At this point, you may mash some of the vegetables, and add them  in the soup.
