Tips & tricks

Spanakorizo has always been a favorite traditional recipe with very few ingredients and remarkable results. This is a vegetarian dish, but it can also be made with pork, lamb, veal, beef, or chicken.

Recipe directions

  • First we must thoroughly clean the spinach from any sand residues. Fill sink with water and let spinach soak for a few minutes. Grab a handful of spinach, give it a gentle shake, and then transfer to other sink. Most of the soil and grit is at the roots (fresh spinach).
  • Once all of the spinach is transfered to other sink, repeat 2 more times.
  • Chop the onions, and herbes.
  • Sauté the onions until tender because the spinach does not require a lot of time to cook.
  • While the onions are sautéing mix the tomato paste with the water and set aside for now.
  • Once onions are done add all the spinach.
  •  If you wish, prior to adding the spinach, you may blanch the spinach for 20 - 40 seconds, quickly cool it and squeeze it dry to remove excess liquid in order to intensify it's flavor and color.
  • After a couple of minutes add the herbes.
  • Add the rice, the tomato paste/water mixture and 2 tsp of lemon juice.
  • Add the salt, pepper and hot pepper flakes to taste (optional).
  • Cook with pot covered at medium heat, stirring every couple of minutes, until the spinach has reduced in size.
  • This is how much liquid you should have at this point.
  • Continue cooking until the juices have evaporated and the rice is cooked.
  • After 40 minutes of cooking raise temperature to medium high with cover removed to allow the juices to evaporate. Cook another 10 minutes or so and you are done.
  • Optional: You can add avgolemono (egg/lemon) sauce.
